Fermented in two batches to compare two different strains of wine yeast. One batch yielded bold, fruit-forward flavors owing to the high fermentation temperatures, and the other resulted in more classic, old-world style subtlety. After blending the two together and aging 24 months in 90% new Russian and French oak, the complexity and length of finish speak for themselves.
